Saw a video on YouTube that challenged the way I think about color. I decided to follow its advice and try painting in monochrome again, and I love the results.

Thank you! Me too. For ~15 minute sketch it has a lot of depth and character compared to my past work.
That video is a good start, if you get the hang of Value/Chroma/Hue (or “saturation” instead of chroma in digital media) your artworks will show it.
Value > Chroma > Hue.
Florent Farges has a lot of very good youtube videos and the ones about color are probably very good for digital artists too.
